If, like me, you object to the bland flavor or wooden texture of theĀ ultra-lean pork they sell in the supermarket, or you object to the despicable way that the pigs are treated in their concentration camp factory farms, you should pay a visit to Tara Firma Farms in Petaluma and buy some of their pork. It is the most flavorful I’ve eaten in the last 25 years, moist, and well marbled with pure white fat. You can clearly see the reason why their meat tastes so good in this photograph of one of their sows and one of its piglets: the pigs are treated well. They are clean, odorless, safe, and healthy, and they romp all day in the long grass with big smiles on their faces.
